- I find the best way is to use a food processor (stand mixer) to bring my ingredients together for the best results. Or use a hand mixer or mix by hand with a large bowl and wooden spoon.
- Small cookie scoop, medium cookie spoon, mini ice cream scoop, or spoon.
- Add the oat flour, nut butter, honey, coconut oil, vanilla and fine sea salt to the mixing bowl of a food processor.
- Blend or mix in 30-second intervals until completely combined. The dough will be similar to regular cookie dough.
- Transfer to a large bowl. Add the chocolate chunks or dark chocolate chips. Mix until combined.
- Using a small cookie scoop, medium cookie scoop or spoon, scoop out bite-sized dollops of dough. Form and roll dough into balls.
- You should have about 12-18 balls from the batch depending on the size you scoop. Store in an airtight container in the fridge for up to two weeks.

- 1 cup (120 g) certified gluten-free oat flour
- ⅓ cup (83 ⅓ g) nut butter, like almond butter
- 2 tablespoons raw honey, or pure maple syrup
- 2 tablespoons coconut oil , or vegan butter, or ghee
- 1 teaspoon vanilla extract
- ⅛ teaspoon fine sea salt
- ½ cup (87 ½ g) dark chocolate, chopped pea-sized or dark chocolate chips
Instructions
- Add the oat flour, nut butter, honey, coconut oil, vanilla and fine sea salt to the bowl of a food processor. You can also use a high speed blender or a large bowl and spoon.
- Blend or mix until completely combined.

Hands down my new favourite sweet treat. If you are a sucker for cookie dough like me, this is definitely the recipe for you. I have a major sweet tooth and could finally indulge without feeling too guilty. I have 2 young kids and they loved them as well (keep asking for more!)
